ingredients

  • 3 lbs mixed vegetables, peeled & cut into chunks (potatoes, carrots, parsnips, turnips, celeriac)
  • 1 teaspoon salt
  • 14 cup warm milk
  • 2 tablespoons butter
  • pepper, to taste

directions

  • Cover the veggies in cold, salted water& bring to a boil.
  • Cook until they can be pierced with a sharp knife, 12 to 20 minutes.
  • Drain well& return to pot.
  • Place the pot over heat to dry the veggies slightly; mash well.
  • Add milk, butter& pepper and mash together.

  2. This mash is very good,DH does not like parnips so left them out, the celeriac is delicious! I used half and half cream (instead of milk)this makes a nice creamy mixture! Served with meatloaf and green beans YUMMY!!

  4. very simple and flexible recipe. I used 1 white sweet potato, 1 sweet potato, pumpkin, 2 potatoes and 3 parsnips and used cream instead of milk. I also cooked them in the microwave. I made it to go with 'really good vegetarian meatloaf' 33921
     
  5. I used what I believe everyone else used-even amt. of turnip, potatoes, and carrots. Instead of adding salt to the water I cooked the veggies in vegetable broth. Very, very nice, my family isn't a fan of turnip and they didn't even notice it!. Thank You Country Lady!

In the words of Tracy Byrd, "I'm from the country & I like it that way"!! On May 1, 2008 my husband and I started a new adventure. We'll be living in a 37 foot RV while our new home is under construction. Its out in the country on a dead end dirt road with lots of trees. For the next 4 months or so, most meals will be cooked on the BBQ and life will be full of challenges! We love spending quality time with our friends & family - especially the grandkids!! The photo is 4 generations - my 84 year old mother, myself, my daughter & my youngest granddaughter - taken at the end of 2006. I've participated in many contests & events here on Zaar but this is the first banner that I've posted.
