Roasted Veggies With Quinoa

ingredients
- 1 butternut squash, peeled & chopped
- 1 bunch asparagus, chopped
- 1 parsnip, peeled & chopped
- 1 bunch carrot, peeled & chopped
- 1 sweet potato, peeled & chopped
- 1 red onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1⁄2 teaspoon dried thyme
- 1⁄4 teaspoon ground black pepper
- 1 cup quinoa, seeds
directions
- Toss vegetables with olive oil, salt, thyme, and pepper.
- Arrange vegetables in single layer on baking sheet and bake at 400 degrees for 40-50 minutes, turning once halfway through.
- While veggies are baking, combine 2 cups of water and quinoa seeds in a pot over the stove; add a dash of salt and bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes; fluff with a fork.
- Spoon vegetables onto quinoa and enjoy.

This was one of the very first vegan dishes I tried and was really happy with the ease and how it turned out! To make this a bit more kid friendly for a 6 year old who is getting used to the vegan life style I added a dash of 100% pure organic maple syrup to sweeten it up. Worked well! Thanks for the great, healthy, vegan stuff!!

I'm an ethical vegan, atheist, wife and stay-at-home mother of a 7 year old DD and 1 year old DS. I have also been known to hug a tree from time to time, but I don't do it professionally.
