Roasted Tomato Sauce

- 2 large tomatoes
- 1⁄2 yellow onion
- 2 garlic cloves
- 1 cup heavy cream
- salt, to taste
directions
- Heat broiler to high.
- Roast tomatoes, onion and garlic until dark but do not burn, these need to be turned often.
- Let cool.
- Peel tomatoes and reserve any juices.
- Place tomatoes, onions and garlic in a blender and process until pureed.
- Place puree in a medium saucepan and bring to a boil over medium heat.
- Cook for 2 minutes.
- Season with salt to taste.
