Rissoles (Italian Style)

"An old Aussie fav, the rissole, has been given a bit of a bashing. This updated version is one my entire family loved. It was inspired by a recipe seen in an Australian food mag but adapted to my families tastes."

ingredients

  • 750 g beef mince
  • 34 cup fresh breadcrumb (made from day-old bread)
  • 150 g roasted capsicums, thinly sliced (chargrilled peppers)
  • 14 cup olive, pitted and thinly sliced (optional)
  • 14 cup fresh basil, finely shredded
  • 1 tablespoon mixed Italian herbs
  • 1 garlic clove, crushed
  • 1 egg, lightly whisked
  • 12 red onion, finely chopped
  • salt & freshly ground black pepper

directions

  • Combine the beef mince, breadcrumbs, capsicum, olives, basil, herbs, garlic, egg and onion in a large bowl.
  • Season with salt and pepper.
  • Divide the mince mixture into 8 equal portions and shape into patties.
  • Preheat a barbecue plate or large non-stick frying pan over medium heat.
  • Add the patties and cook for 5 minutes each side or until brown and cooked through.

  1. 3 out of 4 liked these a lot! The PICKY ONE wouldn't even try. I left out the olives as we don't care for them but otherwise follwed the recipe for a very yummy supper!
     
  2. Served along side Recipe #134360 and a green salad Mmmm, total comfort food!! I made as directed ommiting the olives and roasting about 3 medium capsicum to arrive at the 150g. Thanks so much for sharing this has brought the humble rissole to another level!!

I live in Adelaide, South Australia and work in accounting and payroll. I'm actually about to start a brand new job with an airline which I am super excited about. I live with my bf and brother and enjoy doing all the cooking in our home. I luckly get out of doing the clearing up! (most of the time) I collect old cookbooks. I have many from the 60's and 70's and love to compare the differences in entertaining to what is common place now. Some of the tried and true recipes in these cookbooks are priceless I am completely addicted to meal planning and although I do not always know what I will be making on a particular day I love to be prepared enough to know there is a week or more of options in the house. I'm currently on the look out for the perfect meatloaf. My mum made a great one which I haven't perfectly duplicated yet. Working on it though. It was free form not in a pan and basted with a bbq sauce that I swear she once said had coffee in it??? If anyone has any ideas send me a msg. *** I think I have this worked out and have posted so that I can keep it safe. Sorry all I realise there are thousands of meatloaf recipes out there already. May 2007- Wooohooooo! I am now a premium memember.... And am enjoying all its benifits endlessly. Although my addiction to Zaar is now out of control.
