- 200 g plain flour
- 115 g butter
- 150 g brown sugar
- 50 g granulated sugar
- 20 g cocoa powder
- 1 egg
- 1 tablespoon milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1⁄4 teaspoon salt
- 1 1⁄2 teaspoons red food coloring or 1 1/2 teaspoons beetroot juice
directions
- Cream together the butter and sugar until light and fluffy, then beat in the egg, milk and vanilla until everything is combined.
- Put all the dry ingredients into the a mixing bowl and stir to distribute.
- Add the dry ingredients into the wet ingredients a little at a time, stirring in between additions until a sticky dough forms. Add a few drops of red colouring here and mix well to distribute.
- Cover the dough with foil and chill for at least 1hour. Then scoop out equal sized balls, roll them in icing sugar and put onto a lined baking tray. Gently squash the dough balls with the heel of your hand or the bottom of a glass so they spread out a little.
- Bake for 10 minutes at 180C, then cool completely on a wire rack.
