- 2 cups mashed potatoes
- 1⁄3 cup shallot, finely chopped
- 2 teaspoons chopped chives
- 2 teaspoons Hidden Valley Original Ranch Dressing Mix (dry powder)
- 3 slices bacon, cooked crisp and chopped
- 2 tablespoons grated parmesan cheese
- 2 tablespoons Greek yogurt
- 1⁄4 teaspoon Tabasco sauce
- 2 eggs
- 1 -2 tablespoon flour
- 1⁄2 cup oil (for frying)

- 1⁄2 cup Greek yogurt
- 2 tablespoons dry ranch dressing mix
- 1 tablespoon chopped chives
directions
- In a medium bowl combine mashed potatoes with the next 9 ingredients listed. Stir together until well blended. Heat cast iron skillet with a small amount of oil, on medium heat. Spoon batter into skillet, about a 4 inch round. Brown on both sides, drain on paper towels. Serve with dipping sauce.

I live in far western KY, I work at Carlisle County Schools in the Family Resource center, and I am the High School cheerleading coach. I am a Master Food Volunteer through my county Extension Office.I am married and have two children, one 22 and one 8 years old. My husband is a very picky eater, so I usually cook more for people at work and church, who appreciate my skills. I enjoy cooking and learned most from my Mom and Dad and always enjoyed helping out in the kitchen when I was younger. I enjoy reading recipes and cookbooks. My biggest pet peeve is people who do not wash their hands before and during cooking. Also, I don't like when I am catering and people eat off the platters I am preparing.
