Half pancake, half cookie.

Top Review by A Good Thing

Just enjoyed some of these warm off the griddle. We liked them but feel they could do with a bit of cream or sauce as they are a bit dry. They may be better cooled and eaten as a cookie, though. Made for PAC 2008.

Ingredients Nutrition

  1. Heat griddle until moderately hot.
  2. Sift together flour, sugar, baking soda, salt and nutmeg.
  3. Cut in shortening, as for pastry.
  4. Combine milk and egg; add with raisins to dry mixture.
  5. Stir until moistened and mixture holds together.
  6. Roll dough out onto floured board to 1/4-inch thick and cut with 2-inch round cookie cutter.
  7. Oil griddle lightly.
  8. Place cookies on griddle.
  9. As bottoms brown, top will get puffy.
  10. Turn and brown other side.
  11. Serve hot or cold.
