This is a very quick and easy recipe that can be adapted to a Solo meal ... and works great in the microwave. For enough sauce to meet the needs of a cup of dried pasta, use 2 ounces each of cream cheese and milk, and one ounce of butter. Microwave on high for about a minute and 45 seconds. Take it out, stir, and add a couple ounces or more of parmesan cheese. Stiring in the parmesan cheese last will help thicken the sause.

Scaled this down to make a quick lunch for one, served over tortellini with peas & carrots. Very yummy! I made the sauce in the microwave, and would advise others to watch the sauce very carefully and heat it in short bursts or on a low setting, otherwise it can boil up which results in a less-than-perfect consistency. I also used herb & garlic cream cheese, which was a great way to season it effortlessly :)

I love to cook and I love to eat good, tasty food. I like dishes that are fast and easy, yet delicious during the week because I have a full time job. On the weekends, I love to cook for my family and friends. When I cook, I do not use measurements, I just add what I think is right and that drives my friends crazy because they're always asking for my recipes. I do believe "the way to a man's heart is through his stomach", just ask my husband!
