From a local restaurant in San Antonio, La Fogata. This is a popular appetizer and easy to make. If you can't get Chorizo where you live, you can use this Chorizo to make your own.
- 16 ounces oaxaca cheese
- 4 tablespoons chorizo sausage, cooked
- grilled or sauted onion, for topping
- flour tortilla
- In medium ovenproof bowl, melt cheese and chorizo together in a microwave, or 325º oven.
- Serve with hot tortillas.
Tried this with the family. They loved it with both corn tortillas or chips.
Deelish! This has always been a favorite of mine. Since this is a very rich dish, I recommend corn tortillas rather than flour. That's how it's served at my favorite grill in Matamoros, where I first experienced queso flameado.
Yummy! We thought this was exactly as we remembered having it at La Fogata. We served it for company and they were impressed also. I tore up the cheese into several pieces and put in a shallow baking dish - then sprinkled the cooked chorizo on top. Then put in the oven at 325 for about 25 minutes. The cheese melted perfectly and the edges were just slightly browned. Beautiful.
