- 2 cups brown rice flour
- 1 cup tapioca starch
- 1⁄2 cup sorghum flour
- 1⁄2 cup arrowroot
- 1 teaspoon xanthan gum
- 2 tablespoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1⁄2 teaspoon allspice
- 1 cup raisins
- 1 egg
- 1⁄4 cup egg white
- 1⁄2 cup canola oil
- 1 cup brown sugar
- 1 cup orange juice
- 1 cup milk
- 1 1⁄2 cups pumpkin puree
directions
- Preheat the oven to 350°F.
- Mix the dry ingredients in a bowl including the raisins.
- Mix the wet ingredients in a separate bowl.
- Add the wet mix to the dry and stir until just moistened.
- Fill 24 muffin cups.
- Bake for 20 minutes or until the muffins are cooked through.
