These pancakes were so delicious! They were also quick to make for a rushed dinner last night, and I appreciated the extra nutrition the pumpkin adds. I didn't have the ingredients on hand to make the cider sauce so we just used maple syrup. My 4 boys and husband enjoyed the pancakes, however, and requested that I make them again--and soon! Thanks for such a tasty recipe!
