  • In a large bowl combine sugar, vegetable oil, pumpkin and eggs. Beat for 1 minute. Add baking mix, cinnamon and raisins. Spread in greased, 15x10x1 inch jelly roll pan. Bake at 350, for 25 minutes.
  • Frosting: Beat cream cheese, butter and vanilla until fluffy. Gradually add confectioners sugar. Spread over cooled bars.

In spite of the fact that I'm a huge raisin fan, I substituted dried cranberries for them in this recipe (time of year, or. . .) & THESE TURNED OUT GREAT ~ A very nice addition to my medley of cookies for a sale I'm having! As much as I like these tasties as is, I think another time I might spread the frosting a little thinner (What? I must be loosing my sweet tooth!), & then again, maybe not!
