- 1 cup white rice (feel free to use other types)
- 1 medium potato
- 1⁄4 medium onion
- 1 stalk asparagus
- 1⁄2 teaspoon chili powder
- 1⁄4 teaspoon black pepper
- 2 garlic cloves
- 1⁄4 cup olive oil
- 1⁄2 cup water
directions
- Begin to prepare rice according to your preferences.
- Put oil in pan and place on medium heat.
- Slice potatoes into 1/3" slices and place in oil. Cut asparagus into 1" sections and place in pan. Chop garlic and add to pan. Add the rest of the ingredients and mix well.
- Leave on medium heat while rice is cooking. Add little bits of water over the next 20 minutes to the vegetable mix to keep moist.
- When rice is finished, place on a plate in a mound. Put potato mix over rice and enjoy!
