  • Begin to prepare rice according to your preferences.
  • Put oil in pan and place on medium heat.
  • Slice potatoes into 1/3" slices and place in oil. Cut asparagus into 1" sections and place in pan. Chop garlic and add to pan. Add the rest of the ingredients and mix well.
  • Leave on medium heat while rice is cooking. Add little bits of water over the next 20 minutes to the vegetable mix to keep moist.
  • When rice is finished, place on a plate in a mound. Put potato mix over rice and enjoy!
