ingredients
- 1360.77-1814.36 g boneless pork loin
- 453.59 g dry pinto beans
- 283.49 g can tomatoes and green chilies
- 2 (226.79 g) can green chilies
- 354.88 ml water
- 29.58 ml chili powder
- 9.85 ml ground cumin
- 9.85 ml salt
- 4.92 ml pepper
- 4 garlic cloves, chopped
directions
- Rinse beans and cover with water. Soak overnight OR bring to a boil and boil for two minutes, remove from heat. Cover and let stand for 1 hour.
- Drain beans.
- Cut roast in half and place in bottom of crock pot.
- Combine beans and remaining ingredients. Pour over roast.
- Cook on high for 3 hours then to low for 5.
- Remove meat, shred and return to the crock pot.

Other than using 6 roasted, frozen and chopped Hatch Green Chile Peppers instead of canned green chiles I made this recipe as written. It was easy to put together and had a lot of flavor. I set the dining table with flour tortillas and condiments for a make your own soft tacos meal. It was a big hit. I definitely will make this again. Thanks for sharing.
