This recipe is an easy one from my sister - in - law, Barbara. It can be used as a side dish for ham or pork chops or as a dessert!
- 1 cup drained crushed pineapple
- 1 cup sugar
- 1⁄2 cup butter (softened)
- 4 eggs
- 6 slices white bread (Monk's bread if you have it)
- Blend sugar and butter. Mix in eggs one at a time. Add well - drained pineapple. Cut the crust off the slices of white bread and cut into cubes. Add the bread cubes to the creamed mixture. Pour into well greased 1 quart casserole dish. Cook covered for 1 hours at 350.
