Crust
- 1⁄2 cup butter
- 3 tablespoons sugar
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 egg

Cream cheese filling
- 1⁄2 lb cream cheese
- 1⁄2 teaspoon vanilla
- 2 eggs
- 6 tablespoons sugar
- 1 tablespoon flour
- 2 cups milk

Pineapple mixture
- 1 lemon, juice of
- 1 (8 ounce) can crushed pineapple
- 1 tablespoon flour
- 4 tablespoons sugar
directions
- Mix crust ingredients and press with your hands into 9" pyrex pie plate. Set aside.
- Mix the cream cheese filling ingredients in a bowl till blended. Set aside.
- In a medium saucepan, mix the pineapple, lemon juice, flour and sugar and heat till slightly thickened. Let cool a bit then pour into crust.
- Lastly, pour cream cheese mixture on top.
- Bake at 350 til just set. Approximately 45 minutes to an hour.
