This relish is wonderful on all types of vegetables. It has a sweet, but hot flavor and is considered a staple in our home. Also, it goes well with pork. Prep time and cook time may vary, depending on whether you chop by hand or food processor.
- 18 large hard pears
- 18 bell peppers (use all colors)
- 709.77 ml sugar
- 7.39 ml salt
- 1419.57 ml vinegar
- 5 large onions (mix white and red)
- green hot pepper
- red hot pepper
- Chop all ingredients.
- Cook until tender.
- Pour into heated jars.
- Clean rims of jars and place lids and rings on jars and tighten.
- Process in hot water bath.
- Remove from heat and tighten rings again.
- Set out and allow to cool completely before storing.
I made this today using 5% acidity white vinegar and a combination of garden fresh green and purple bell peppers. The fruit and vegetable combination was cooked for approximately 30 minutes. I could see that by using a combination of green, yellow and red would make a beautiful presentation. Made this in the Fall of 2011 for PAC and have been eating on it for quite a while. Have been forgetting to come back and add my star rating. This stuff is awesome. We really enjoy it as an accompaniment to grilled hot dogs as well as beans and cornbread. This is delicious and a great way to use up pears! It is great with barbeque chicken and pork. I've made a lot to give as Christmas gifts. Thanks for posting!
