Sugar-Free Peach Gelato

"This came from Fitness Magazine, August 2007. I haven't tried this yet...but it looks healthy and delicious! I substituted Splenda for the sugar in the recipe. Cooking time includes freezing time."

  • Cut peaches into very small pieces. (The smaller you cut them, the finer the texture of the gelato will be.).
  • Arrange the peach pieces in a single layer on a baking sheet, and freeze solid. (About 2 hours.).
  • Put the frozen peach pieces in a food processor, along with the Splenda, and grind briefly. Add the yogurt and pulse until the mixture is smooth.
  • Empty into a small container and freeze for 20-30 minutes before serving.

  1. YUMMY! EASY CREAMY TART and SWEET! I made a half recipe. I made this even easier by starting with frozen chopped peaches. I doubled the Splenda and used extra nonfat greek yogurt. We enjoyed this right away. My Mother thought it was impressive "company" food or something you'd have in a fine restaurant. These got really hard when frozen and had to thaw a long time for leftovers. Made for Pick-A-Chef Fall 2007.
     
  2. I don't know if I did something wrong but I would like someone to get back to me on this. Mine turned out real gritty and not creamy at all. I followed to recipe just like it says. Maybe I didn't puree the peaches enough or something????
     
  3. I halved the recipe and used a Splenda, sugar combination with the plain yogurt. Next time I will make the full recipe because this was gone in one sitting. Thanks.
     
  4. This was great! The problem is, even though its healthy, it tastes so good you end up eating wayyyy to much it anyway. :-). Thanks for this recipe!
