Sugar-Free Peach Gelato

- 1360.77 g fresh peaches, peeled and pitted
- 59.14 ml Splenda granular, sugar substitute
- 118.29 ml yogurt
directions
- Cut peaches into very small pieces. (The smaller you cut them, the finer the texture of the gelato will be.).
- Arrange the peach pieces in a single layer on a baking sheet, and freeze solid. (About 2 hours.).
- Put the frozen peach pieces in a food processor, along with the Splenda, and grind briefly. Add the yogurt and pulse until the mixture is smooth.
- Empty into a small container and freeze for 20-30 minutes before serving.

YUMMY! EASY CREAMY TART and SWEET! I made a half recipe. I made this even easier by starting with frozen chopped peaches. I doubled the Splenda and used extra nonfat greek yogurt. We enjoyed this right away. My Mother thought it was impressive "company" food or something you'd have in a fine restaurant. These got really hard when frozen and had to thaw a long time for leftovers. Made for Pick-A-Chef Fall 2007.

I love to cook for my large husband...he is a natural powerbuilder and has a lot of muscle to feed. People ask how he got so "huge" and he has to answer, my cooking of course!
We both work out a lot, so we eat a lot of healthy food...I cook a LOT! The recipes I post and save to my cookbooks are usually healthy and lower calorie, or can be adapted to be so.
