Pasta With Tomato and Bacon Sauce

This is so quick and easy. Just add warm, crusty garlic bread and a salad for good, easy nosh!!

  1. Put the garlic, tomatoes, olive oil, mixed herds and sugar into a saucepan. Add a dash of salt and pepper and bring to the boil, then cover and simmer for 10 minutes.
  2. Add the bacon and simmer, uncovered, for another 5 minutes.
  3. Stir in the mascarpone cheese or creme fraiche, heat up, then taste and add more salt and pepper if it needs it.
  4. Meanwhile, cook the pasta according to the packet instructions.
  5. Dollop the sauce over the pasta and enjoy with garlic bread and salad.

Simple and delicious, excellent mid-week meal. I really liked the creamy addition of mascarpone. This would be lovely with any pasta, I stuck to the traditional spaghetti. Very, very tasty pasta dish! UsedEmeril's Italian Essence for the dried herbs, & substituted lemon pepper for the 'salt & pepper' bit! Served with rotini pasta for a flavorful meal! Normally I'd have cut the amount of bacon in half, but didn't this time & everything was GREAT! Thanks for sharing! [Made & reviewed for one of my adoptees in this Spring's Pick-A-Chef]

This is such a simple and great recipe! I loved the richness that the mascarpone cheese gave. I used Italian seasoning for the dried herbs and served with over Angel Hair pasta. The bacon gives a nice flavor as well, I used smoked bacon and it was very flavorful. Thanks for posting a great recipe! (Made for PAC 2007)
