Pasta with Blue Cheese Sauce

- 1 tablespoon blue cheese
- 2 tablespoons light cream cheese
- 1 tablespoon sherry wine
- 1 large onion
- 1 cup tomatoes, chopped
- 2 cups pasta
- 2 teaspoons parsley
- 2 teaspoons basil
- 2 teaspoons oregano
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
directions
- Preheat oven to 350 degrees.
- Roast onion in oven for half an hour or until tender.
- Allow to cool.
- Peel and quarter.
- In blender, blend onion, blue cheese, cream cheese and sherry till very smooth.
- Cook pasta (gnocchi works well) in salted boiling water till done. Drain & toss with tomatoes, herbs, salt and pepper.
- Stir in sauce and serve.

This was pretty good, but it needs a bit of tweaking. Strangely for a recipe containing blue cheese, the taste of the cheese is overpowered by other flavors in the sauce (namely, the onion), even though I added extra cheese. I roasted the onion at 350 for 40 minutes. It was tender (so I think I roasted it long enough), but the onion flavor was very strong and dominated the dish. Sauteing the onions in olive oil might make a difference; also, I think that 1/2 of a medium onion would be enough. This was a fast, easy meal...just not quite to my taste. Thanks for posting!
