Pasta Salad--Inspired by Rita

ingredients
- 2 cups elbow macaroni, uncooked
- 1 cup frozen peas, uncooked (or fresh peas, scalded for 1 to 2 minutes)
- 3⁄4 cup baby carrots
- 2 celery ribs
- 5 -6 spring onions or 5 -6 green onion tops
- 1⁄3 - 1⁄2 cup salad dressing (or your favorite mayo)
- 1 tablespoon tarragon vinegar
- 1 tablespoon fresh ground horseradish
- 1 clove fresh garlic, minced
- 1 1⁄2 teaspoons Dijon mustard (I use Grey Poupon for this)
- 1 teaspoon sugar
- salt and pepper, to taste
- rita grilled portabella mushroom, diced (Garlic-Herb Portabella Mushrooms) (optional)
directions
- Cook macaroni according to package instructions, al dente.
- Drain in colander, then rinse with cold water.
- When macaroni is chilled and well drained, return to pan.
- In foodprocessor, chop celery ribs and carrots (separately if using mini-food processor).
- Gently toss frozen peas with pasta, breaking apart any peas that are frozen together.
- Add chopped celery and carrots and gently toss again.
- In foodprocessor, blend remaining ingredients, excluding the mushrooms.
- Pour over pasta and vegetables, gently folding until coated.
- Refrigerate for 2 hours or overnight to allow flavors to meld.
- Note: If using the option of Rita's Grilled Portabello Mushrooms, they can be blended in with the carrot and celery addition, or served as an optional topping or side to be added by each individual.

This is a great pasta salad. I usually get in a rut and make the same old macaroni salad (ya know the one with tuna) so now I can add this to my choices, and to have one that is vegetarian friendly. I only used about a teaspoon of horseradish and it gave it a nice little bite, I will try more next time. Cindy Lynn, you did good with this one!

Thanks for the great recipe! I had my DH grill the portabellos yesterdayPM (so they were in the frige, waiting). I did substitute a little, for lack of the called for items. No tarragon vinegar, so used rice vinegar, chopped red onions for those called for, and frozen peas and carrots for the peas. Thanks again for the recipe. Loved it!

This I made in honor of Cindy. Her not feeling well I went and looked to see what I had in my recipe file of hers then saw this had to do with me.To my Grilled Portabello Mushrooms recipe #61725 I also marinated the carrots and scallions, then grilled.Then added the grated cheese. Just to good. Cindy I`d say we work together good.

I am currently a stay at home Mom and wife (aka: homemaker, domestic engineer, chauffeur, etc.). My husband and I made this choice about 2 1/2 years ago. At the time I was averaging 72 hours/week +. Our kids were complaining that they never saw me, and one of them was even getting in trouble (too little supervision apparently). We got the troubled teen through high school, and she is currently preparing for college. Things have improved a lot so I am considering going back to work part-time while the kids are gone to school (if the right opportunity presents itself).

<br>I love to cook, especially trying new recipes. I get tired of the same ol', same ol'. I also love reading cookbooks and the history of recipes. I always hated doing all the dishes afterwards, so I did a lot of one dish meals whenever possible. Recently, my husband bought me a new dishwasher, so now I am cooking up a storm! Everyone is loving it.
