Not overly sweet and good source of fiber and protein.
- 3 overly ripened bananas, mashed
- 1⁄2 teaspoon baking soda
- 6 eggs
- 1⁄4 cup coconut oil, melted
- 1⁄2 teaspoon nutmeg
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon salt
- 1⁄2 cup coconut flour
- 1⁄2 cup dark chocolate chips
- Blend all ingredients in one bowl.
- Separate the batter into 12 jumbo muffin wrappers (I usually use the aluminum ones).
- Bake muffins at 350 degrees for 25-30 minutes.
