  • Blend shortening and sugar.
  • Add eggs and beat.
  • Stir in orange peel, juice, and milk.
  • Mix dry ingredients together.
  • Add dry ingredients to other ingredients.
  • Stir just until mixed together.
  • Pour into greased muffin cups.
  • Bake at 400 degrees F for 25-30 minutes, watching carefully.

  2. I love orange cranberry anything so half the batter I made as written and the other half added some Craisins. Both muffins were very good and didnt last long around here. Liked that they were crunchy around the edges and moist inside. I put everything in my KA mixer and in no time the batter was ready to go. Will make these again soon! Made and reviewed for the recipe tag game For Your Consideration.
     
  3. I was skeptical of orange muffins, but I made this recipe to use up some orange juice that was close to the expiration date. The muffins turned out amazing! I reduced the sugar in the recipe to about 1/3 cup but then sprinkled raw sugar and finely chopped almonds on top. I'll definitely make these again.
     
  4. Great muffin recipe! Loved the flavors of the orange within. I did take the liberty and added some dried cranberries to the batter and due to that added a tad bit more of OJ to help the batter. Perfectly baked in 25 minutes and received 12 muffins from this recipe. Thanks for sharing a great muffin recipe that I'll be making often! Tagged in Gimme 5 tag game Jan. 2009.
     
  5. These were wonderful semi-sweet, subtly flavored orange muffins. My dh & I enjoyed them very much. Made exactly as written we got 1 dozen muffins from the batter. They were quick and easy to make. The batter was thick but easy to work with. The muffins were crisp and crunchy on the outside and tender and moist on the inside. Thanks so much for sharing your moms recipe.

Tweaks

  1. I used fresh respberries instead of oranges and added a bit more milk--wonderful!
     
  2. Made 9 muffins out of the mix. Used margarine instead of shortening and did add more orange juice (as Boomette suggested) as the batter was very thick. Added some dried cranberries to the mix. Nice breakfast muffins, not to sweet! Thanks Lavender Lynn! :)
