Oatmeal Toffee Cookies

  • Preheat oven to 350 degrees.
  • Combine flour, oats, baking soda and salt in medium bowl.
  • Stir with a whisk.
  • Place sugar and butter in large bowl and beat until well blended (about 5 mins on medium speed).
  • Add vanilla and egg.
  • Beat well.
  • Add flour mixture until just combined.
  • Stir in toffee bits.
  • Drop by tablespoon full two inches apart on baking sheets coated with cooking spray.
  • Bake at 350 degrees for 11 minutes or until lightly browned.
  • Cool for about 1 minute on pan.
  • Remove cookies from pan and completely cool on wire rack.

  1. My family didn't really care for these. The cookies ended up thin and hard. There was nothing wrong with them, I suspect it was just a preferance issue and would encourage others to at least give them a try.
