- 1 egg
- 1 cup buttermilk
- 1⁄2 cup brown sugar, packed
- 1⁄3 cup shortening
- 1 cup oats, quick cooking
- 1 cup all-purpose flour
- baking powder
- 1 teaspoon salt
- 1⁄2 teaspoon baking soda
directions
- Preheat oven to 400°F.
- Grease 12 muffin cups.
- Beat egg and add buttermilk, brown sugar, and shortening.
- Mix in remaining ingredients and stir gently, just until flour is moistened. Batter will be lumpy.
- Fill muffin cups 2/3 full and bake 20 -25 min or until light brown.
