This is my favorite soup. I like to make alot so I can put some in the freezer and have it when ever I want.
- 1 (16 ounce) package dried navy beans
- 6 cups water
- 1 (14 1/2 ounce) can diced tomatoes
- 1 onion
- 1 clove garlic
- 3 celery ribs
- 3 ham hocks or 3 chopped ham
- 1 chicken bouillon cube
- 2 tablespoons Worcestershire sauce
- 1 tablespoon dried parsley
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 bay leaf
- Soak beans over night.
- Place all ingredients in a crockpot and cook on low for 8-10 hours.
- Discard bay leaf.
This is one of the best soups I ever made and deffinitely the tastiess bean soup. I didnt want to walk to the parsley in the dark so I substitued Italian Seasoning, I used the bone and some meat from a smoked ham I cooked and since my crockpot doesnt work well I made the ham stock, took the meat off the bone, soaked the beans overnight using its water in the stock too and cooked it on top of the stove. Brought to a boil then turned to a simmer for 2 1/2 hours. Deffinitely a number one comfort food, had supper, 2 lunches and 2 bags in the freezer.
I followed this recipe EXACTLY and I can't tell you how disappointed my husband and I both were! The soup was nowhere near done, the beans were still HARD! I will say the broth had a good flavor, but that's the only good thing I can say about it...
