- 177.44 ml frozen corn, steamed for about 3-4 minutes
- 425.24 g can organic black beans, well drained
- 118.29 ml organic cucumber, peeled and chopped
- 59.14 ml yellow bell pepper, seeded and chopped
- 59.14 ml red onion, finely chopped
- 1 small avocado, chopped
- 59.14 ml grape tomatoes, halved
- 29.58 ml fresh cilantro, chopped
- juice of one lime
- 1.23 ml salt
- fresh ground black pepper
- 0.25 ml cayenne pepper
- 4.92 ml ground cumin
- 1-2 fresh jalapeno pepper, chopped (optional)
directions
- Mix corn and beans in large bowl (corn can still be warm from cooking – it will cool down pretty quickly when cold items are added.).
- Add remaining ingredients; toss gently.
- Taste for seasoning.
