Mutter Pulao (Rice Pilaf With Peas)

"This Pakistani side dish is superb, it goes great with pretty much anything and is easily enjoyed by itself too. Serve with some yogurt or achar and it's great! It may look a little overwhelming to make but it's actually quite easy."

  • In a pot, heat up the oil on medium high heat.
  • Add the onion and cook till it softens, becomes translucent and releases its water. Do not brown or dry out.
  • Add cloves, bay leaf, cardamom, peppercorn and cumin.
  • Fry for about a minute or so.
  • Add turmeric powder, coriander powder and chilli powder. Stir and fry a bit. If it looks a little dry add a little bit of the chicken stock that you have aside.
  • Add the garlic and ginger paste, stir fry a minute or two.
  • Add the peas and chicken stock and let it warm up but not to a boil.
  • Add rice and salt to taste. Stir well. Increase heat to high. Let the rice come to a boil and let boil for 5 minutes.
  • Give a quick stir, cover with lid and turn heat down to medium and let cook for 15 minutes.
  • Turn the stove off. Do not uncover the rice or move it from the stove. Let it sit in its steam for 5-10 minutes as the stove cools down allowing the rice to become fluffy.
  • Serve hot!

  1. Excellent! The only things that I did different is that I used basmati rice, didn't add the chili powder, and as soon as the liquid was boiling well with the rice, I covered it and put it into a 350 degree oven for 20-30 minutes. Turned out perfect!
     
  2. Made for Spring 2010 PAC I liked this very much, however, for me, it came out a bit too mushy, but I accept full responsibility for that, I may have overcooked the rice. The flavor was terrific and I will make this again.

I'm married to love of my life who works very hard to keep me happy. Normally, I'm okay when it comes to cooking, nowadays, I feel like I don't know what I'm doing in the kitchen anymore and am completely out of dinner ideas. Guess thats what happens after the first year of being married. I also just gave birth to my first child on Oct. 11, 2009 and am a new mom dealing with the stresses of parenthood in the beginning. I use cooking as an outlet to keep my hands and mind busy. Many Many heartfelt thanks go out to the very generous man who gifted me premium membership here on zaar. It came at a time when I truly needed it and am so thankful for such a random act of kindness. I have just become completely addicted to zaar. It has become my go-to website for cooking. I love reading different recipes and reviews, wondering if I can make them and if i'll like it. I have my hands full with my first child but it doesn't stop me from looking up recipes and trying them out. My husband and I love vegetables and chicken. All other eating options are once in awhile if at all. I really learned cooking from my husband, he's amazing in the kitchen, he can just make something out of nothing and have it turn out to be fantastic but if you ask him the recipe he'll have no idea. He's very creative like that, I on the other hand- not so much. Zaar has helped start turning the wheels in my brain to be creative in the kitchen again.
