Mom T's Swiss Steak

ingredients
- 2 -3 lbs round steaks
- oil
- 1⁄2 cup flour
- salt and pepper
- 1 onion, sliced
- 1 (10 1/2 ounce) can beef broth
directions
- Cut steak into serving sizes, removing fat.
- Spray medium size casserole dish that has lid with some nonstick spray and set aside.
- Heat some oil in a skillet.
- Mix flour with some salt and pepper; coat steak in this mixture.
- Brown in oil on both sides in the skillet.
- Place browned steak in the casserole dish.
- Saute the onions in the skillet until just softened, picking up some brown bits from bottom of pan.
- Add beef broth to pan and scrape up all the brown bits stuck to bottom.
- Heat until it comes to a boil.
- Note: You can use a flour slurry (flour dissolved in water) to thicken the gravy at this point if you choose to do so.
- Pour onions and broth on top of steak in casserole dish.
- Cover and bake in 400 degree Fahrenheit oven for 1 to 1-1/2 hours, until tender.
