Moist, Healthy Meatloaf in the Crock Pot

"I often use ground bison (instead of the turkey) when I make this, and I use a vegetarian sausage ("Gimme Lean"). It's really moist and VERY low fat, if you use the bison."

  • 453.59 453.59 g bison meat or 453.59 g beef
  • 226.79 g lean turkey sausage or 226.79 g vegetarian sausage
  • 236.59 ml textured vegetable protein (dry, soy crumbles)
  • 118.29 ml bisquick low-fat baking mix
  • 35.43 g envelope fajita seasoning mix or 35.43 g envelope equivalente spices
  • 29.58 ml barbecue sauce
  • 29.58 ml tomato sauce
  • 118.29 ml egg substitute
  • 14.79 ml minced dried onion
  • salt and pepper
  • 2 tomatoes

  • Mix first ten ingrdients and shape into a loaf. Refrigerate overnight (to let flavors blend).
  • In the morning, spray crockpot bowl with non-stick spray. Slice tomatoes over the bottom of the crockpot, and gently set the refrigerated loaf on top of the tomatoes.
  • Cook on low for 8-10 hours. Serve with salsa, if desired!
  • Can be frozen.
