  1. In skillet, sauté carrots, onion and celery and cook until softened, about 7 minutes.
  2. Add garlic and spices and cook, stirring, for 1 minute. Add tomatoes with juice and bring to a boil. Transfer to slow cooker.
  3. Stir in squash. Cover and cook on low for 6 hours.
  4. Add coconut milk, bell pepper and chile pepper and stir well.
  5. Cover and cook on high for 15 minutes, until peppers are tender.
