Mississippi Mud Cake

"This was my great-Aunt Clarabell's recipe. My sister and I had been wanting some of this for years when she was able to dig up a copy of the recipe in an old church cookbook. I plan to make this soon to see if it is as good as I remember from my childhood!"

  • Cream sugar and butter; add eggs.
  • Sift flour, cocoa, and salt together; add to mixture. Mix well.
  • Add vanilla and nuts.
  • Pour in greased and floured 9 x 13 pan.
  • Bake 30 – 40 minutes at 325.
  • Remove from oven, pour marshmallows on top.
  • Return to oven for 10 minutes or until marshmallows run together.
  • Let cool 1 hour in pan, prepare icing.
  • ICING: Mix butter, sugar, cocoa, vanilla, and milk. Mix thoroughly, add nuts.
  • Spread on cake.

I do something a little different than most people. Instead of OAMC, I do OAMS (once a month shopping). I have a large family and a small grocery budget. Feeling convicted about overspending on groceries (by going to the store everyday or every other day "to pick up something for dinner") pushed me to sit down and concentrate on making a detailed 4 week menu and shopping list. This has saved me a TON of money; I have fed a family of 7 on less than $400 consistently for the last 6 months. Thank you, FlyLady for the menu-planning inspiration!!
