A very hearty chili that is mainly vegetables. Healthy, low fat meal that is not short on flavor.

  1. *Diced vegetables- larger pieces if you don’t mind seeing the vegetables, smaller cuts if you want to hide the vegetables (from children & husbands) Everything will taste like chili when it is done.
  2. Put all into crock pot and cook on low for 4-8 hours.
  3. Serve with a dollop of sour cream or top with shredded cheese.
