Meatloaf

"I know there are a lot of meatloaf recipes out there but this one isn't out there, and I love it. All of the measurements are estimated. I have never actually measured everything but just put in roughly what looks good. I especially have estimated the bread, oats, and crackers. As far as those go, I would suggest putting in as much as is needed to keep the loaf from being soggy, but not so much that it is really dry. The beef can be lean or not- that is up to you. I hope you enjoy it! Its been my favorite!"

directions

  • dice bell pepper, onion, and celery.
  • grate carrots or chop finely.
  • put the previous ingredient in a bowl and add the oats.
  • next, crush the crackers in your hand as you add them to the bowl
  • pull apart the bread in to smaller peices and add them to the bowl.
  • add ketchup, milk, eggs, diced tomatoes, tomato sauce and spices.
  • mix well.
  • using your hand add in the ground beef and continue to mix well. IF the mixture is still really soggy and runny add more crackers, bread or oats.
  • place in a glass pan (roughly the same size as a 9 x 13).
  • cook at 375 degrees Farenheit for approximately an hour and 15 minutes (until the internal temperature is cooked).
