Marinated Artichoke With Zucchini and Onion

A light summer side dish best served cold or room temperature. Cook time is chill time.

  1. Lightly saute the zucchini/squash and onion using olive oil no calorie spray.
  2. Mix with jar of marinated artichoke hearts.
  3. Cool for 15 minutes.
  4. Add the liquid from the jar.
  5. Season with salt and pepper if desired.
  6. Refrigerate for a min of 4 hours.
