Marie's Italian Sausage Soup

  • Mix everything except pasta and garnish together in a large stock pot.
  • Bring to a boil and let simmer 15-60 minutes.
  • Add cooked pasta just before serving.
  • Top with garnish.

  1. This was super hearty and super delcious (or should I say "souper"?). It also makes a LOT so be sure to use a giant pot. I think it serves much more than 8. I didn't follow the cooking directions exactly, but I believe I maintained the spirit of the recipe. I browned my sausage and, when partially done, added the onion and carrots, to cook a little more. When done, I added the garlic for a minute before adding the tomatoes, beans, basil, salt and pepper. Once that was well combined, I added the chicken broth. I simmered that for about 15 minutes, then brought it to a boil again and added uncooked mezze penne pasta. I let that cook for another 10 minutes. Before serving, I added some parmesan cheese. A little of this soup goes a long way because it is so filling. Thanks for sharing. Made for Spring PAC 2014.
     
  2. Also a cold and rainy day here in South Dakota I thought the recipe sounded good. I was wrong......it was GREAT!!!!! I can't wait until I reheat it for lunch . Husband said it's a keeper...Thanx for sharing!!
     
  3. Believe it or not, it was cold and rainy down here in the Florida Keys a couple of days ago. . . perfect to make a batch of soup. This hit the spot for sure!!! I followed your directions exactly. I did mash up the beans a bit before adding the pasta. Thanks for sharing, KelleyMcCoy.

<p>After 9 years(!) I thought I should update my profile and hopefully add more recipes soon. I still love to cook and love Food.com (good old recipezaar!) but my updaate is that my husband and son have become more adventurous eaters. When I started on this site my son was 3 or 4 months old. He's almost 9 now and HE cooks! I'm trying to raise a really well rounded, healthy son and teaching him that cooking is fun has been a joy.
