Low Carbed Broccoli and Cheese Soup

A soup recipe without the flour/starches.

Directions

  1. Boil broccoli and broth on high heat.
  2. Once boiling, stir in cubed cheese.
  3. Heat/stir until melted.
  4. Eat all week.
  5. Carbs come from broccoli and very little in the cheese.
  6. Enjoy!

I used 8 cups of broth, fresh broccoli and 8 oz. of cheese. I also pureed the broth/broccoli before adding the cheese. This made 8 servings (about 1 C. ea.) with 8.6 g of fat per serving.

I took most of the brocolli out and blended it until smooth then put it back in the pot before adding the cheese. Excellent recipe, yummy soup.
