  • Clean squid. Place tentacles in a food processor. Chop rest. Set aside.
  • To processor add pork. Grind well.
  • Heat 3/4 of an inch of olive oil in a skillet.
  • Add the onion, garlic, parsley and breadcrumbs. Saute 4 minutes.
  • Add squid/pork mix and the pine nuts, salt and pepper. Saute 5 minutes.
  • Drain. Let cool.
  • To pan add the dashi and sake. Reduce by half.
  • Add the nuts, chocolate, cinnamon, almond extract and bread. Puree.
  • Heat oven 350.
  • Place chopped squid meat in a sprayed 9x13. Top with pork mix, then puree.
  • Bake 30 minutes.
