- 1 1⁄2 lbs squid
- 1 lb boneless pork loin (cubed)
- olive oil (as needed)
- 3 onions (minced)
- 5 garlic cloves (minced)
- 1 tablespoon parsley (minced)
- 1⁄2 cup breadcrumbs (toasted)
- 1⁄2 cup pine nuts (toasted)
- salt
- fresh cracked pepper (to taste)
- 2 cups dashi
- 1 cup sake
- 1⁄2 cup pine nuts (toasted)
- 1 cup almonds (slivered, toasted)
- 4 ounces 70% dark chocolate (chopped)
- 1 dash ground cinnamon
- 1 dash almond extract
- 4 slices white bread (crusts removed)
- canola oil (as needed)
directions
- Clean squid. Place tentacles in a food processor. Chop rest. Set aside.
- To processor add pork. Grind well.
- Heat 3/4 of an inch of olive oil in a skillet.
- Add the onion, garlic, parsley and breadcrumbs. Saute 4 minutes.
- Add squid/pork mix and the pine nuts, salt and pepper. Saute 5 minutes.
- Drain. Let cool.
- To pan add the dashi and sake. Reduce by half.
- Add the nuts, chocolate, cinnamon, almond extract and bread. Puree.
- Heat oven 350.
- Place chopped squid meat in a sprayed 9x13. Top with pork mix, then puree.
- Bake 30 minutes.
