Make and share this Lemonade Lychee and Coconut Cocktails recipe from Food.com.
- 5 cups water
- 3⁄4 cup sugar
- 1 cup lemon juice (about 4 lemons)
- 1 cup Malibu rum (you can add more if wanted) or 1 cup white rum (you can add more if wanted)
- 14 ounces lychee in a light syrup
- In a saucepan, bring to boil 1 cup water and sugar stirring until sugar is dissolved. Pour in a pitcher. Add lemon juice, rum, lytchi and their syrup. Put in fridge around 4 hours or all night.
- Serve with ice.
Based on another review, I cut the amount of sugar and used only some of the lychee syrup. And... they were wonderful - refreshing with a perfect blend of sweet and tart with a whisper of coconut. I topped each glass off with a splash of diet cherry 7-up. made for ZWT9 Soup-a-Stars
This was really yummy, but pretty sweet. I think next time I'd blend it so the lychees got mixed in. Made for ZWT8
