Coconut Cocktail

Non-alcoholic sweet party drink. Serve in a large champagne glass.

ingredients
- 1 1⁄2 ounces pineapple juice
- 1 1⁄2 ounces coconut milk
- 3⁄4 ounce passion fruit juice
- 2 teaspoons lemon juice
- 2 teaspoons grenadine
- 1 teaspoon cream of coconut
directions
- Shake all ingredients together with ice.
- Strain into a champagne glass.

I multiplied this up to make a whole pitcher of it. I used light coconut milk and half lemon/half fresh squeezed lime juice (what I had on hand). Pretty creamy pink color, and not excessively sweet with the citrus juice in there. It needs to be stirred before serving, because it separates pretty quickly, but no big deal, it still tastes good. Amanda, this would make a great punch for a little girl's birthday party. Very refreshing and very pretty! I liked it, but it was just a bit too sweet for me. (Of course, that would be easily resolved by adding some libation, but that would defeat the purpose of non-alcoholic... :lol: ) Thank you for posting Amanda!
