- 29.58 ml olive oil
- 907.18 g lamb, cubed
- 2 medium onions, sliced
- 2 garlic cloves, minced
- 118.29 ml raw white rice
- 453.59 g potato, pared and thinly sliced
- 19.71 ml salt
- 7.39 ml curry powder
- 1.23 ml pepper
- 226.79 g zucchini, sliced
- 255.14 g package frozen artichoke hearts
- 793.78 g tomatoes, undrained
- 59.14 ml chopped parsley
directions
- Pre heat oven 350.
- Heat oil in a large skillet, brown lamb in batches.
- Add onion and garlic, saute' until golden, about 5 minutes.
- Return lamb to skillet, mixing well.
- In a 3qt casserole,place in layers, 1/3 meat,rice, potatoes,salt,curry powder,pepper,zucchini,artichokes and tomatoes.
- Repeat layering twice with the rest of the ingredients.
- Bake covered, 1 1/2 hrs or until lamb and potatoes are tender.
- Top with parsley and serve.

I'm a working mom of 2 my son is 14 and my daughter is 11. O.K. 3 kids if you count my hubby. My son is on the picky side but loves food with a kick. My daughter will eat anything(yes even sauerkraut) the only thing hubby won't eat is raw cabbage he's getting better thanks to this site (he even ask me to make slaw). I love to cook and try new things. One of our favorite stations is food network.I've been playing around with pics and updated my pic & my icon. O.k. Tim because well just because i love to cook with the Cd player or radio blasting and i love his stuff. The Dancing Bears because my DH and i are (were) huge dead heads.
