Kelly's Blueberry Banana Bread

"NOT bragging, but everyone says this is simply the best banana bread they've ever had. Blueberries are one of my FAV fruits and I put them in everything!I LOVE to make it, especially since it makes 2 loaves. We keep one and always give the other one away. :)"

  • In large bowl, mix all ingredients except blueberries for about 30 seconds.
  • Fold in frozen berries.
  • Pour into 2 greased 8 1/2x4 1/2x2 1/2 loaf pans that have been greased on the bottoms only.
  • Bake in 350º oven for 55-60 minutes, til toothpick inserted in center comes out clean.
  • Cool slightly, loosen sides with knife from sides of pan, turn out onto rack to cool.
  • When cool, wrap tightly with plastic wrap, keep refrigerated.
  • Best the next day!
  • *Ialways bake blueberries frozen in breads and muffins so they hold up perfectly, and you don't end up with a hollow blue hole, lol.

  1. The flavor was great... but I wasn't a huge fan of the texture. I think butter instead of oil may have been a better fat to use, in my opinion, because I like the crispness of the crust that butter gives banana bread. The oil made the loaves more of a spongy, more rubbery texture (very slightly). I think I'll try that substitution next time; otherwise, it was great!

  2. Made this for weekend breakfast for the family... and they LOVED it! Only made 1/2 the recipe for one loaf and left out the coconut and nuts...but it was truly amazing. Moist, rich and delicious. I ate mine warm with butter. This really deserves 6 stars!!
     
  3. So easy and yummy. I left out the pecans. I also got one loaf and 9 muffins. The muffins took 20 minutes and the loaf took 55. I didn't tell DH there was coconut in it and he didn't notice.
     
  4. Seriously one of the most delicious banana bread I have ever tried! Love the combination of banana, spices, nuts and blueberries. We could not resist and ate 1 loaf almost immediately! Will definitely make it again!
     
  5. I only made it for one loaf and it came out a little dense but flavorful. I did not have coconut or pecans so I skipped those. Lastly, I used maple syrup instead of sugar.

  1. This bread was awesome. I've been making regular ol' banana bread and wanted to try something new but not TOO new. This did the trick. I added dried blueberries instead of the pecans because my husband doesn't like nuts. It worked out great. Thanks for the recipe.
     
  2. We had this hot right out of the oven with butter. Delicious!! I did use FF Sour Cream instead of the oil and left out the coconut and pecans, also increased the cinnamon to 1 teaspoon. Will make again, thanks!
     
  3. I subbed blackberries for the blueberries, and made these into muffins. I believe these took about half an hour and made 12 good sized muffins. So moist and tasty, thank you! These'll be made over and over again.
