ingredients
- 1 1⁄2 cups flour
- 2⁄3 cup sugar
- 1⁄2 teaspoon salt
- 2 1⁄4 teaspoons baking powder
- 1⁄2 cup oats
- 2 eggs
- 2 ripe bananas
- 1⁄3 cup vegetable oil
- 1 cup chopped walnuts
- 1 cup blueberries
directions
- Preheat oven to 350 degrees. Grease and flour a loaf pan.
- In a large bowl mix flour, sugar, salt, baking powder, and oats.
- In a medium bowl, mash the bananas. Beat in the eggs and oil. Add to dry ingredients and mix to combine. Fold in nuts and blueberries.
- Pour batter into the prepared loaf pan. Bake at 350 degrees for 1 hour. Cool in the pan for about 10 minutes, then remove and cool on a wire rack.

Made this during my Christmas baking. Added nearly 2 cups of blueberries and huge chunks of walnuts, certainly more than was called for. I also added a dash of cinnamon and nutmeg because I like a spiced loaf. I finished up by adding a butter/flour/sugar crumble to the top. Hearty loaf. I sliced off a 2" slab and called it breakfast. Will be making again. Totally owns 5 stars.

Oh So Yummy! I used an 8x4 glass loaf pan and baked on convection @325f. This gave me a beautiful loaf that I taste tested with a cuppa Earl Grey. The blueberries went in still frozen and they are a grand addition. Instead of the walnuts I had just the right amount of pecans so I used the last of them. Thanks for a lovely treat loof. :D
