A healthier version of pasta fagiole (without the pasta) Kale is a nice change from spinach and edamame goes with everything.

Directions

  1. 1. Mince garlic.
  2. 2. Chop onion and kale.
  3. 3. Saute onion and kale with garlic in oil.
  4. 4. Put all ingredients in a large pot.
  5. 5. Simmer for about an hour.

Made for PAC Spring 2014. This was a nice tasting soup, especially given the simple ingredients and easy preparation. I used a bean mix that contains cannellini beans, but other than that followed the recipe as posted. Very hearty, the edamame adds a buttery flavour to the broth that was really nice. To take it over the top, grate on a bit of real parmesan cheese and add just a sprinkle of fresh pepper.
