One-dish low-fat meal from Cooking Light. I have made this many times for company. It can be made ahead and everyone likes it.

  1. Combine first 9 ingredients in a 2-quart casserole coated with Pam and stir well.
  2. Arrange chicken breast halves over rice mixture and sprinkle with garlic powder. Sprinkle with Parmesan cheese and 1 1/2 teaspoons Italian seasoning. Cover and bake at 350 degrees for 45 minutes. Uncover and bake an additional 15 minutes or until liquid is absorbed.
