Honey Cake

I copied this recipe from a friend of mine and it has been a hit at our house ever since. It is very low in fat and high in flavour! The recipe makes 3 loaves which freeze very well. I prefer baking the loaves in silicone loaf pans, as I found that the bottom tended to burn a bit when baking them in non-stick pans. Tastes great with a bit of butter and a cup of coffee.

After mixing this up I was a little apprehensive as this has no eggs or oil. It makes a very nice spice bread that was enjoyed by all. I added up all the spices listed and used 2 tablespoons of Recipe #145505 for the spices. Made for *PAC Fall 2008*

  1. Bring milk to a boil in the microwave. In a separate bowl, blend all dry ingredients. Slowly add milk and honey. Mix well. Pour into 3 greased loaf pans and bake at 350F for about 1 hour.
