Homemade Italian Pasta Sauce

- 3 tablespoons olive oil
- 5 5 links pork stew meat or 5 links pork neck bones
- 1 small onion
- 1 tablespoonful garlic, minced
- 4 (28 ounce) cans of pear shaped tomatoes, mash them or (28 ounce) cans tomatoes, strips
- bay leaf, if you have it
- salt
- pepper
- 1 dash hot pepper flakes
- parsley, to taste
- basil, to taste
- 1 tablespoon sugar
directions
- Olive oil goes in the pot.
- Brown meat (add some salt/pepper/hot pepper). then remove it for now.
- Slice up the onion and simmer in the olive oil a few min till its soft.
- Making sure heat is low, add garlic and simmer for a miniute.
- Add cans of tomatos (add some salt/pepper) add bay leaf if you have one, raise the heat some but keep stiring till you get it slowly boiling (dont burn the botom) then LOWER the heat to very low and readd the meat.
- Cook it about a hour stiring occasionaly then add FRESH basil and Fresh parsly just chop it, few tablespoons of each.
- Cook it a hour more and its done, you can add some sugar a few min before its done. Taste, add a little more salt or pepper if needed. remove the bay leaf.
