- 16 ounces coconut milk
- 24 ounces chicken stock
- 8 ounces mushrooms, chopped
- 10 ounces extra firm tofu, cut into 1-inch slices
- 8 ounces bamboo shoots
- 2 tablespoons basil, finely chopped
- 1⁄2 teaspoon cilantro, finely chopped
- 2 teaspoons ginger paste
- 1 chicken or 1 turkey breast, cut into 1-inch slices
- 1 teaspoon lemongrass paste
- 1 tablespoon lime juice
- 1 tablespoon fish sauce
- 1 tablespoon sriracha sauce
directions
- Mix all ingrediants together in a stock pot except for Tofu.
- Bring to a boil.
- Simmer for 10 minutes.
- Remove from heat and add Tofu.
- Serve hot.
