- 29.58 ml olive oil
- 177.44 ml green onion, sliced
- 1 garlic clove, minced
- 283.49 g can Rotel Tomatoes
- 118.29 ml salsa (your choice)
- 411.06 g can chicken broth
- 473.18 ml water
- 368.54 g canned chicken, drained (or turkey) or 473.18 ml shredded cooked chicken (or turkey)
- 340.19 g small red new potato, sliced small
- 236.59 ml carrot, sliced
- 236.59 ml red green yellow, and orange bell pepper
- 236.59 ml zucchini, sliced at 1/8 in size
- 538.64 g can white navy beans or 538.64 g can kidney beans, drained
- 2 bay leaves
- 4.92 ml dried basil leaves
- 4.92 ml dried oregano leaves
- 29.58 ml lime juice
- 4.92 ml lime zest, if desired
directions
- In a large, deep skillet, (or large sauce pan with wide base), saute green onions, potato, and garlic in oil until soft.
- Add all remaining ingredients except lime juice and peel.
- Bring to a boil, stirring occasionally.
- Reduce heat to medium-low and simmer 20 minutes, or until potatoes are just tender.
- Stir in lime juice and peel, remove bay leaves. ENJOY!
