- 2 tablespoons extra virgin olive oil
- 1 cup onion, finely chopped
- 1⁄2 cup green pepper, finely chopped
- 1⁄2 cup red pepper, finely chopped
- 3 garlic cloves, minced
- 2 2⁄3 lbs lean ground turkey
- 2 (15 1/2 ounce) cans red kidney beans, drained and rinsed
- 2 (15 1/2 ounce) cans black beans, drained and rinsed
- 3 (14 1/2 ounce) cans diced tomatoes
- 1 (14 1/2 ounce) can low sodium chicken broth
- 1 tablespoon hot red chili pepper flakes
- 1⁄3 cup chili powder
directions
- Heat 1 tablespoons oil in a sauté pan. Sauté onions, peppers and garlic until soft, and slightly browned (about 3-5 minutes). Put into crock pot.
- Heat remaining oil in the same pan and brown ground turkey until fully cooked (about 7 minutes).
- While the ground turkey is browning, drain and rinse all of the canned beans and add to the crock pot.
- When the ground turkey has finished browning, drain and add to the crock pot.
- Add all of the remaining ingredients to the crock pot and stir well until thoroughly combined.
- Cover and cook on low for 6 - 8 hours (4 hours on high, if you are in a hurry).
- Top with 2 tablespoons of shredded Mexican cheese (OPTIONAL) and serve.
